Lovely round-up, Maddy! I absolutely love Upstate. It's peaceful while still having so many lovely things to do + places to visit. I would add Spruceton Inn to the stays list. The owners are incredible and the land it's on takes my breath away. They also have a barn library filled with good reads! A spot I want to eat at next is the Westerly Canteen. Local foods are served out of an airstream, and once again, the land it sits on is beautiful. I love the spots that blend into their surroundings.
going to saugerties this wknd for the hudson valley garlic fest (went last year too, SO much fun) and will certainly look into some of these restaurants!! hehe
